Apple Crumble Muffins

Ingredients
Topping:
1 cup all-purpose flour
1/4 cup + 2 tablespoons brown sugar
1/4 cup granulated sugar
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
5 tablespoons dairy-free unsalted butter
1/2 teaspoon vanilla extract
Cake:
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 cup almond milk
1/2 tablespoon lemon juice
Apples:
Dice 2 medium apples
1/2 tablespoon pure maple syrup
Sprinkle cinnamon to taste
Sprinkle nutmeg to taste
Instructions
Preheat oven to 350 Fahrenheit.
For the crumb, in a mixing bowl whisk together flour, sugar, salt, cinnamon, and nutmeg. Melt your butter and add to the bowl. Add the vanilla extract. Use a fork to fluff the mixture until you get a crumble.
For the cake batter, add flour, baking powder, baking powder, and baking soda and whisk together. In a new bowl, use an electric mixer to cream butter and sugar until it’s light and fluffy. Add egg and vanilla extract and beat again. In a new small bowl, mix the almond milk and lemon juice - let it sit and curdle for a few minutes. Beat in the almond milk and lemon juice. Add flour to the bowl and beat slowly until combined.
For the apples, peel off the skin and dice the apples into cubes. Coat the apples with maple syrup, cinnamon, and nutmeg.
Add liners to the cupcake tray. Add a tablespoon of the cake batter, cover the cake batter with diced apples, and add the crumble.
Bake for 15-18 minutes or until a toothpick comes out clean.
