Cinnamon Swirl Muffins
Prep Time: 10-15 minutes (including making the batter and cinnamon swirl)
Bake Time: 20 minutes
Cooling & Glazing Time: 10 minutes
Total Time: 40-45 minutes
Ingredients
Muffins:
2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup olive oil
1 large egg
3/4 dairy-free milk
1/4 cup unsweetened applesauce
Cinnamon Swirl:
1/3 cup granulated sugar
2 teaspoons cinnamon
2 tablespoons unsalted dairy-free butter
Glaze:
1/2 cup powdered sugar (add more if it’s not thick enough)
1 tablespoon dairy-free milk
Instructions
Preheat oven to 375 Fahrenheit. Line muffin tin with liners.
For the muffins, use a large bowl to mix the flour, granulated sugar, baking powder, and salt.
In a new bowl, whisk together the milk, olive oil, and egg.
Stir the wet ingredients into the dry.
Fiil each muffin tin leaving 1/3 room at the top.
For the cinnamon swirl, combine the sugar, cinnamon, and melted butter in a bowl. Add half a teaspoon of the cinnamon to the muffin mixture. Mix with a toothpick.
Bake for 20 minutes, or until a toothpick comes out clean.
Once baked, let the muffins cool down for about 10 minutes, and then add your glaze to the top of the muffins!
